Classic scones with jam and clotted cream

with no experience what so ever treat yourself to the classic scones with jam and clotted cream!!!

INGREDIENTS

  • 350g self-raising flour
  • 1 tsp baking powder
  • 85g butter, cut into cubes
  • 3 tbsp caster sugar
  • 175ml milk
  • 1 tsp vanilla extract
  • a squeeze of lemon juice
  • beaten egg, to glaze
  • jam-for topping-to serve (optional)
  • clotted cream-to serve (optional)

Step 1

Heat the oven to 220C/200Cfan/gas7. Tip the self raising flour into a large bowl with the baking powder then mix together.

Step 2

Add the butter, then rub together with your fingers until it resembles fine bread crumbs. Stir in the caster sugar.

Step 3

Pour the milk into a jug and put into the microwave around 30 seconds until warm. Add the vanilla extract and the lemon juice, then set aside for a moment.

Step 4

Put a baking tray into the oven. Make a well in the middle of the dry mix, then add the liquid you made in step 3 and combine it quickly – it will seem pretty wet at first.

Step 5

Scatter some flour onto your work surface and tip the dough out. Cover the dough and your hands in a little more flour, then fold the dough over 2-3 times until it gets a little smoother. Make the dough 4cm deep. Take a 5cm round cutter and dip it into some flour. Plunge into the dough, then repeat until you have made 8 circles. If you have some of the dough left then make it into 8 more circles of dough.

Step 6

Brush the tops of the dough with the beaten egg , then carefully place them onto the baking tray. Once you have put all of the dough onto the baking tray, bake for 10 mins until it has risen and is golden on the top.

ENJOY

Eat just warm or cold on the day of baking, generously topped with either jam or clotted cream
