Welsh cakes
If its welsh night make these delicious welsh cakes to follow the tradition.

INGREDIENTS
- 225g plain flour
- 85g caster sugar
- 1/2 tsp mixed spice
- 1/2 tsp baking powder
- 50g butter cut into small pieces
- 1 egg beaten
- splash milk
- 50g currant(optional)
- 50g lard, cut into small pieces, plus extra for frying
Step 1
Tip the flour, mixed spice, baking powder and a pinch of salt into a bowl. Then with your fingers rub in with your hands until it resembles bread crumbs. Mix in the currants. Mix in the egg into the mixture until you have soft dough.
Step 2
Roll out the dough on a lightly floured workspace to the thickness of your finger. Cut out circular shapes using a cutter. Grease a pan with the lard and put over a medium heat. Cook the welsh cakes in batches of 3 or 4 for 3 mins each side until it us golden. Served with any toppings of your choice or simply have it plain. ENJOY!
